CAL/SERV : 359 PREP TIME : 15 MINS YIELDS : 8 SERVINGS COOK TIME: 30 MINS INGREDIENTS 8 boneless, skinless chicken breasts, cut into 32 cubesGround black pepper, to taste8 mushrooms8 whole white onions, parboiled2 oranges, quartered8 canned pineapple chunks8 cherry tomatoes1 can (6 oz) frozen apple juice concentrate, thawed1 C dry white wine2 Tbsp low-sodium soy sauceDash ground ginger2 Tbsp vinegar1/4 C vegetable oil8 wooden or metal skewers INSTRUCTIONS Sprinkle chicken cubes with pepper.Thread 8 skewers as follows: chicken, mushroom, chicken, onion, chicken, orange quarter, chicken, pineapple chunk, cherry tomato.Place kabobs in a shallow pan.Combine the remaining ingredients; spoon over kabobs.
